Cecchini, starring in the next season of Netflix’s “Chef’s Table,” is known all over the world for his over-the-top style and his ‘no waste’ philosophy. This ‘nose-to-tail’ afternoon will put his artistry on display as he breaks down a side of beef onstage, talks about the legendary Bistecca alla Fiorentina (Florentine Steak), and puts on a dynamic presentation full of storytelling and maybe a little AC/DC!
Dario’s family has been in the butchery business for eight generations in the small town of Panzano-in-Chianti and doing whole animal butchery since before it was the hot culinary term. “A butcher represents the most delicate link in the food chain. He must take the responsibility to show and teach respect for the animal that has given its life to sustain us,” he says. Cecchini believes that “no cut is any better than another, the cow is not made up of only the filet and steak. Every bit can be great, from head to tail, if cooked properly.” His philosophy of ‘no waste’ is applied in his butcher shop and his restaurants Solociccia and Officina della Bistecca.
His butcher shop in Panzano, Antica Macelleria Cecchini, is a sight to behold, with AC/DC usually blaring from the speakers and Dario behind the counter, wielding a cleaver and quoting Dante’s Inferno.
Dario will be starring in the lineup for season six of “Chef’s Table” on Netflix, the Emmy-winning documentary series that focuses on innovative chefs around the world, to be released in Spring 2019. He has also been featured on “Anthony Bourdain: No Reservations,” PBS’ “Dream of Italy,” Netflix series “Somebody Feed Phil,” and in countless publications such as the New York Times, Bon Appetit.com, and Lucky Peach.
